Morning Oatmeal Muffin Bites

Hey y'all!  Mandee from The Kitchen Wife here, I can't believe the back to school season is upon us.  Here in my hometown in West Virginia, the kiddos have already began their 2016/2017 school year.  Now that school is back in session our mornings just got a little more hectic.  Got to get the kids up, ready, fed, and out the door in time for them to make it to class, and you to make it to work.  Well, let me help you with that!  Instead of slaving over a hot stove in the morning, make a batch of my delicious Morning Oatmeal Muffin Bites!

Let's Get Started!
Morning Oatmeal Muffin Bites:
*Prep Time:  5 min.  *Cook Time: 15-20 min  *Difficulty: Easy  *Servings: 32 mini muffins

Ingredients:

The ingredients needed to make the Morning Oatmeal Muffin Bites.

  • 3 c Rolled Oats
  • 2 Eggs, lightly beaten
  • 1 c Brown Sugar
  • 1/2 c Almond Milk (Or any milk)
  • 1/2 c Applesauce 
  • 1/4 c Canola Oil
  • 1 Tbsp Cinnamon
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • Mini chocolate chips or blueberries for toppings
To begin you will need to preheat your oven to 350 degrees. 


The oats, eggs, brown sugar, applesauce, salt, cinnamon, and baking powdering in a mixing bowl.

Next in a large mixing bowl combine the oats, eggs brown sugar, applesauce, salt, baking powder, and cinnamon.

Then add the almond milk and...

Canola oil.

All of the ingredients for the morning oatmeal muffin bites mixed together.

Gently mix all of your ingredients together.

The batter will be loose, and you will think to yourself "This is too runny. It will never work."  But don't worry, it is supposed to look like that, and it WILL work!

The morning oatmeal muffin bite batter scooped into mini muffin pans.

Now scoop the batter into your MINI muffin tins.  I like using a cookie dough scoop for this.

**If you don't have mini muffin pans you can use regular.  You will just need to bake them for 30 min, and they will not make as many.**

Next place the muffin tins into the 350 degree oven and bake for 15 to 20 minutes until golden brown.

Once they are finished baking remove them from the oven.

Immediately add any toppings you want.

Let the muffins cool for 10-15 minutes and gently remove them from the muffin tin.

And there you have it!  A delicious, breakfast of Morning Oatmeal Muffin Bites that you can feel good about!  I usually serve 3 of these as a portion, but if you are doing the full sized muffins, one will be fine.  These also hold up well for a couple days in the refrigerator.

Morning Oatmeal Muffin Bites:

Directions:
  1. Preheat the oven to 350 degrees.
  2. In a large Mixing bowl, combine all the ingredients except for the chocolate chips or blueberries.
  3. Mix everything together. 
  4. Scoop into mini muffin tins. *
  5. Place into preheated oven and bake for 15-20 minutes, until golden brown.**
  6. Remove from oven and add toppings.  
  7. Let cool for 10 minutes.
  8. Serve and enjoy.***
   *You can use regular muffin tins as well. 
 **If using regular muffin tins, you will need to let bake for 30 minutes. 
***You can store for 2 days in the refrigerator.
