Crunchy Rice Krispies Coated Chicken

It isn’t everyday that my kids actually praise dinner and ask for more... but tonight that actually happened! Busy days and running around from activity to activity make it really hard to get home cooked meals on the table, but this recipe for crunchy Rice Krispies coated chicken is quick and easy, plus it uses only minimal ingredients I almost always have on hand.  It is a great recipe for a busy mom, and the fact the kids ate ALL of it and even asked for more is a huge bonus.



The recipe uses chicken, eggs, milk, flour and the star ingredient: Kellogg’s Rice Krispies.
Rice krispies cerealNot just for breakfast anymore, Rice Krispies is a perfect coating for chicken since it is easy to use and retains it’s crunchiness after baking.

Crunchy Rice Krispies Coated Chicken

Modified from Kellogg’s
2 cups Kellogg's® Rice Krispies® cereal (I didn't crush mine, but you could if you wanted it more like breadcrumbs)
1.5 lb pounds boneless, skinless breasts (filleted or pounded flat**)
1 large egg (I used 2 medium eggs)
3/4 cup milk
3/4 cup all-purpose flour
Seasoning (I used 1 1/2 tsp salt, 1/4 tsp pepper, 1 tsp paprika and 1 tsp chicken seasoning mix)
**It would be simple to modify this recipe using small pieces of chicken to create ‘nuggets.’  I didn’t do that because breading whole breast fillets was faster, but that is a kid-friendly modification.

Preheat oven to 350 degrees.
1. Combine milk, egg, flour and seasonings in small bowl.  This is the batter for the chicken.  In a second shallow dish add your Rice Krispies cereal.  (I didn’t crush the cereal at all, but you could if you wanted the coating to be finer)
Coating chicken with crispy rice cereal2. Dip the breast fillets (or nuggets) in the batter and drop into the cereal.

3. Gently press the cereal onto the battered chicken.

4. Place in greased baking dish, making sure to now crowd the pieces. Crunchy chicken with rice krispies5. Bake at 350 for 45 minutes (or until internal temperature reaches 165 degrees) The baking time can be significantly higher or lower depending on size of thickness of chicken pieces.

I served my chicken with peas (my kids love peas) and some parmesan angel hair.
Rice krispie chickenThe kids ate ALL of it and even asked for seconds.  It will definitely become a regular menu item in our house! Baby likes chickenI guess this is proof that Rice Krispies aren’t just for breakfast anymore  (but I love eating cereal in the middle of the night so I guess I already knew that!)
