Hey y'all!  Mandee from The Kitchen Wife here, I can't believe the back to school season is upon us.  Here in my hometown in West Virginia, the kiddos have already began their 2016/2017 school year.  Now that school is back in session our mornings just got a little more hectic.  Got to get the kids up, ready, fed, and out the door in time for them to make it to class, and you to make it to work.  Well, let me help you with that!  Instead of slaving over a hot stove in the morning, make a batch of my delicious Morning Oatmeal Muffin Bites!

Pumpkin Monkey Bread Recipe

Hey y'all!  Mandee from The Kitchen Wife here! And I don't know what the weather is like in your neck of the woods, but around here Fall is in full bloom.  The wind is blowing, the air is crisp, and the trees are stunning. With autumn among us, that can only mean one thing...Pumpkin season has arrived!  Now I know you've been bombarded with coffee drinks, donuts, and muffins galore, but I promise you that my Pumpkin Monkey Bread takes the heap!

Using Yoghurt To Create Decadent Desserts

Today’s post is more than a simple recipe.  It is about utilizing a simple ingredient (in this case yoghurt) to create a unlimited variety of dessert options for any palette. Often relegated to breakfasts, and lunch boxes, yoghurt is frequently overlooked when it comes to dessert.  But not only can it be served alone, yougurt also can be integrated into sweeter desserts (such as baked goos), offering moisture and tartness, while maintaining it’s fruity quality.

When I was a kid my mom would always make something she called “Sausage and Cornbread Pie” which was nothing more than cornbread with sausage mixed in, spread in a pie plate and baked.  We would eat it for breakfast (I loved mine with either honey or maple syrup) and even now, the flavor combination of sweet cornbread and salty-spicy breakfast sausage reminds me of my mom.

Recently I was asked to come up with a recipe on behalf of Hillshire brands and the Mom It Forward Blogger Network and of course my mind went straight to that Sausage-Cornbread Pie.  I did want to update it a little, and with the addition of spinach and parmesan it becomes a great brunch option. The perfect balance of starch, vegetable and protein.  A complete little meal in one bite.  I even stuck them in the kids’ lunches to eat cold, since the protein rich sausage and cheese keeps them full.

Fool Proof Bread Machine Bread: Only 5 Ingredients!

I have always been a fan of my bread machine, but I have never been able to get consistent results.  Some loaves of bread are beautiful, crispy on the outside and light and fluffy on the inside and others are like bread bricks.  For some reason, some don't rise well and end up dense and heavy and not very good. 

I have always followed the instructions on my bread machine manual (keep the wet ingredients away from the yeast), and I fear it has led me down the wrong path. Although it flies in the face of what everyone says you are "supposed to do" I stumbled upon this 'no fail' methodology and now, dozens of loaves later, I am confident this is the ONLY way to use my bread machine. 

I am including the standard 5 Ingredient White Bread recipe, but I have altered this method to make other recipes (such as this Hawaiian Sweet Bread) and they have ALL come out great.  

Look at these nooks and crannies.. Perfectly risen, light and fluffy.  Just like bread from the bakery! 

5 Ingredient White Bread
To the bottom of your bread machine add:
1 cup warm water (or whatever your liquid you are using.  "Warm" means approximately 110 degrees  or 'luke warm')
2 Tbsp Sugar (or whatever sugar source your recipe uses.. honey, brown sugar etc)
1 (0.25 oz) pack Rapid Rise/Bread Machine yeast (2 1/4 tsp from the jar)

Allow the yeast to dissolve and foam for about 10 minutes and then add: 
1/4 cup Oil
3 cups Bread Flour (or All Purpose)
1 tsp. Salt

Start your machine (I use either the Basic or White setting but if you are making a sweet bread you can also you alternative settings) and walk away. 

There is nothing like warm bread straight out of the machine.. Enjoy! 

Mini-Cinnamon Rolls (from Crescent Dough)

You know you are desperate for a carb filled snack when you decide to whip up some cinnamon rolls in the middle of night.   But that is exactly what I did.  I didn't want to bother starting from scratch, and when I saw LifeIsTooShortToSkipDessert's recipe I knew it was the perfect solution
 
For 1 tube of Pillsbury crescent rolls you will need:
4 Tbsp brown sugar
1 tsp cinnamon
1 Tbsp butter (melted)
1 Tbsp flour
 
I unrolled the crescent rolls onto parchment (just for easy clean up) and then mixed the sugar, cinnamon, butter and flour together to make the filling:
 
Don't separate the crescent dough into triangles, but leave the triangles paired in rectangular shapes (if they start to come apart just moosh them back together) and spread the filling onto the rectangles:
 
 Roll up the short side until you have a tube:
 
And then using dental floss (a cool trick) cut them into 3 small rolls:
Place them in a cooking-spray coated baking dish or on a cookie sheet:
 
 Bake for 12-15 minutes at 350 degrees and they will puff up and get all cinna-mini delicious.

After they cool slightly I added a quick glaze:
1/2 C powdered sugar
2 t milk
A few drops of vanilla extract

Drizzle it on and enjoy!  But trust me.. you won't be able to stop at just one:
