Grilled Chicken Cordon Bleu Recipe

I am SO EXCITED to introduce to to a new monthly feature here on TheKimSixFix.  A monthly recipe post from a super good friend of mine:  Mandee from TheKitchenWife.

It's officially fall Everyone!  And while the temperature is slowly declining (for some of us anyway), and the leaves on the trees are beginning to change color and drop, I'm just not quite ready to give up my grill.  Yes, I'm craving those heartier dishes, but there's just something about grilled food that is irresistible.  That's why I love this recipe for Grilled Chicken Cordon Bleu.


You get all of the great flavors of the traditional chicken cordon bleu, but with that little hint of smokiness only grilling can give you.  This Grilled Chicken Cordon Bleu is packed full of flavor, and couldn't be easier to make.  I know you are going to love it, so...

Let's Get Started!

Grilled Chicken Cordon Bleu:
*Prep Time: 10 min. *Cook Time: 20 min  *Difficulty:  Easy  *Servings: 4 

Ingredients:

  • 4 Boneless, Skinless Chicken Breasts
  • 8 Slices of Black Forest Ham, Deli Style
  • 4 Slices of Creamy Havarti Cheese 
  • 2 tbsp. Dijon Mustard
  • 2 tbsp. Honey
  • 2-3 tbsp. Extra Virgin Olive Oil
  • 1 tsp. Garlic Powder
  • 1 tsp. Thyme
  • Salt & Pepper, to taste

The boneless skinless chicken breast being seasoned.

To begin you will want to season your chicken breast, on both sides, with salt and pepper.

Then, with your pairing knife, cut a small pocket into the thickest side of your chicken breast,

Now let's assemble the filling.
Place two pieces of ham on your cutting board, overlapping.

Now place the slice of Havarti cheese at the top of the ham slices.

The Havarti cheese rolled up in the ham.

Roll the ham around the slice of cheese.

Next place the ham and cheese into the pocket you created in the chicken.
Sit this chicken breasts to the side, and let's get starting on the mustard glaze.

A tablespoon of whole grain Dijon mustard being added to a mixing bowl.

Usually Chicken Cordon Bleu is served with a mustard sauce.
I thought it would be a great play on the original if I made a mustard glaze for the chicken.

In a mixing bowl, combine the mustard (I used whole grain here, but any Dijon will do.),

A tablespoon of honey being added to a mixing bowl.

Honey,

A teaspoon of dried thyme being added to the mixing bowl.

Thyme,

A teaspoon of garlic powder being added to a mixing bowl.

Garlic Powder,

Pepper being added to a mixing bowl.

A pinch of salt and pepper,

Extra Virgin Olive Oil being added to the mixing bowl.

And the olive oil.

The mustard, honey, thyme, garlic powder, salt, pepper, and oil being whisked together to create the glaze for he chicken.

Whisk it all together until everything comes together and the glaze is ready!

Now it is time to grill the chicken.
You will want to place it on a preheated, medium/high grill.
Cook 6-8 minutes on each side until the chicken is no longer pink and the juices run clear.

Now simple baste the mustard glaze on the chicken, close the lid, and give it a couple of minutes to caramelize.
You will want to flip the chicken and do the other side as well.

Place the fully cooled chicken into a baking dish to rest for about 5 minutes.

On the chicken has rested it is time to eat!
Would you look at how beautiful that is!  The chicken is perfectly cook and juicy.  The ham is salty and crisp on the edges.  And the cheese...OH THE CHEESE!  It is literally oozing from within the chicken!  Everything combine with that sweet and tangy glaze and you have a chicken dinner fit for a king.

Grilled Chicken Cordon Bleu:

Ingredients:
  • 4 Boneless, Skinless Chicken Breasts
  • 8 Slices of Black Forest Ham, Deli Style
  • 4 Slices of Creamy Havarti Cheese 
  • 2 tbsp. Dijon Mustard
  • 2 tbsp. Honey
  • 2-3 tbsp. Extra Virgin Olive Oil
  • 1 tsp. Garlic Powder
  • 1 tsp. Thyme
  • Salt & Pepper, to taste
Directions:
  1. Season the chicken, on both sides, with salt and pepper. 
  2. Using a pairing knife, create a small pocket in the thickest part of the chicken.
  3. Place two pieces of ham, overlapping, on the cutting board.  
  4. Place the slice of cheese at one side and roll the ham around it. 
  5. Place the ham and cheese into the pocket in the chicken.
  6. For the glaze combine the mustard, honey, olive oil, thyme, garlic powder, and pinch of salt and pepper in a mixing bowl. 
  7. Whisk together until smooth. 
  8. Preheat the grill with a medium/high heat. 
  9. Place the chicken on the grill and cook for 6-8 minutes on both sides until no longer pink and the juices run clear.  
  10. Brush glaze onto the chicken and let cook for a couple more minutes to caramelize.  
  11. Flip and do the other side. 
  12. Place the cooked chicken in baking dish and let rest for 5 minutes. 
  13. Serve with your favorite sides and Enjoy!
